It's the return of Sunday grilling! Okay, we have been grilling/smoking all along but nothing new has really gone on around here so we haven't shared anything new. Today though, we tried out grilled shrimp tacos and they were GOOD... so we wanted to share. Super easy, too. I'm sure everyone has their own preferences as far as shrimp tacos go but we weren't picky since we haven't made them before so this was a super quick and easy version.
We started with our usual shrimp. We have (sort of) shared our marinade recipe before. Truthfully, there isn't a recipe. I mix together a bunch of spices and call it a day. No measuring or anything. Here is what is in it (this time):
Olive oil (EVOO)
Minced Garlic (I like the garlic that you buy in jars because it is just easier)
Onion Powder
Dried Parsley
Dried Oregano
Dried Basil
Smoked Paprika
Old Bay (a good amount)
I let the shrimp sit in the marinade for at least 30 minutes but prefer about an hour. This time it was closer to 30 so that we could eat early and go on a walk. Then, we skewer them as this is the easiest way for us to cook them on the grill. Steven handles that part so I had to ask him how he usually cooks them. He does them on direct medium to medium-high heat and he just rotates them periodically so that they do not burn. He was a bit wishy washy on how he cooks them. Sort of like the marinade and me. We also sometimes saute the shrimp in lieu of the grill if we are short on time or I am doing it alone. That works too, but we like the char of the grill.
Earlier while the shrimp were marinating, I made a shrimp taco sauce. I pulled a recipe from online and tweaked it a bit. It was super easy as well.
1/4 cup sour cream (I used light)
1/4 cup mayo (again... light)
1 tsp lime juice
1 tsp cilantro (I cheated and used the paste kind because I couldn't locate any actual fresh cilantro in the store and I don't have any on hand)
3/4 tsp Old Bay (I might have used a bit extra. Love Old Bay.)
You mix it all up and let it sit at least 30 minutes.
When everything was done, we put some lettuce on flour tortillas (and I added tomato to mine), added a bit of shrimp, and some of the sauce. Easy peasy. It would have been good with some guac too but I didn't have any available.
Just in case anyone is curious, the kids LOVE shrimp but tacos are so messy (and Kenzie wouldn't eat them anyway) so we made them cheese quesadillas and gave them some shrimp. Kenzie wasn't as keen as we were on the char but she ate some of the shrimp. She prefers hers sauteed apparently. Will, on the other hand, gobbled up the shrimp like it was going out of style and then promptly started asking me for "Bite. Bite. Bite." until I shared some of my taco with him. So, he ate about 1/2 of a taco too.
This dinner was a winner all around. Easy as can be and super yummy. I think we will definitely be trying it again.
